Aspiration (slurping)

The majority of this cafe information is dated to 2008 and is not entirely accurate. 7 04 2009

Drawing coffee into the mouth by slurping it so the roast mixes with the oxygen in the air allowing it to release more flavour and spread it evenly across the tongue. In a cupping, aspiration helps attain a better sensory evaluation of a coffee’s nuances.

Author’s note:
When cupping it helps to have a cup of water on hand and to not eat anything while trying different roasts.

Ashy

The majority of this cafe information is dated to 2008 and is not entirely accurate. 7 04 2009

A term used in the tasting of coffee that refers to either the over roasting or over extraction of the espresso from the bean.

Author’s note:
Some reference the Ashy aroma as a dark roasted bean. In my opinion this is more of a coffee tasting term and not commonly referenced in my neck of the woods.
